Rubble is the cheapest and simplest way of stonework.
Stone Masonry does not depend on strong bonding for stability.
But the weight causes stability problems when the loads push it in angle. The best way of bonding is that where the blocks are placed so that the vertical joints in one course are not about the joints in the course above and below.
